「ガンで亡くなった」という場合、died of cancer か died from cancer どちらが正しいですか？違いはありますか？

die of 〜 も die from 〜 も、正しいです。
強いて言えば、
die of 〜「〜という病気で亡くなる」
die from 〜「〜が原因で亡くなる」
のようなニュアンスがありますが、どちらもあまり違いはありません。
ちなみに、die in 〜 は事故などで亡くなることを表すことが多いです。
例）
He died in a car accident.（彼は車の事故で亡くなった）

以下、cancer「ガン、癌」の種類別の言い方です。
lung cancer「肺がん」
stomach cancer「胃がん」
liver cancer「肝臓がん」
skin cancer「皮膚がん」
breast cancer「乳がん」
pancreatic cancer「膵臓がん」
colorectal cancer「大腸がん」

My grandfather died of stomach cancer after two years of battle with the disease.
私の祖父は、２年間の闘病の末、胃がんで亡くなりました。

He died from overwork.
働きすぎが原因で死んだ。

This new cancer treatment has not been approved yet in our country.
