Signature は「署名・サイン」と言う意味で、自分の名前を書けばいいです。
尚、電子サイン、紙へのサイン両方を表します。

いいえ。筆記体以外でも構いませんし、どんな書き方でも良いです。
但し、パスポートに署名する欄がありますので、そのサインと同じようにしておくといいでしょう。
基本的にはひとつに統一しておく必要があります。
一方で Name と書かれた項目な場合は、サインとは違って正式な名前を書いてという意味ですので、その国の言語できれいな名前を書いてください。
パスポートでも、Name と Signature と使い分けられていますので、一度見て見て下さい。
