morning, evening には定冠詞 the がついて、noon には何もつかないのはなぜでしょうか？

morning, afternoon, evening どれも時間の幅があるので、in the morning / afternoon / evening のように ”the” が付きます。
唯一無二の一地点ではないからです。

一方、noon, midnight は「正午/ 深夜0時」という一地点を指しますから、人の名前のように固有名詞の扱いになり、at noon / midnight となります。

Lunch will be served in the restaurant at noon.
昼食はレストランで正午に振舞われます。

You should be home by midnight at the latest.
遅くとも午前0時までに帰ってきて

「午前中に」はどっちが正解ですか？

ただ、以下のような場合には on が使われます。

・～日の午前中に：on the morning of the 日付（序数）
ex) on the morning of the 24th
・～月…日の午前中に : on the morning of 月 + 日付（序数）
ex) : on the morning of June 24th
・～曜日の午前中に : on 曜日 morning
ex) on Sunday morning

家族とか友達にはあまり使いません。
実は 結構固いニュアンスの言葉なので 家族や友達の間では Morning（おはよう）を使います。
ただホテルとかビジネスシーンなどでは Good morning というのは普通に聞きます。
